I owned Australia's only timber bending company for 30 yrs, IMHO, white ash would be the way to go, soaks up the steam, and is easy to work with. Good luck.

KC13 only ran a four barrel carb set up, I had one a 15' pickle fork, ran an honest 103mph, with a club foot.
