lack of feel if they use non return valves
If you want a perfect feel then cable and pulley is the go
If you are driving for miles and not racing then you might be happier with hydraulic with the lock valves in them as the engine torque does get back to the wheel.
The helm pumps generally are like a trim pump, has lock valves operated by a shuttle valve, no pump turning, oil locked
Hydrive in Australia can build a helm built without the lock valves so you are "live " with the engine if you want to be
Its certainly adds a bit of weight to boat over any other steering system
